Javi Olleros was born in Lucerne, Switzerland, where his father, also a cook, emigrated to work in the kitchens of large restaurants. Today is the owner and head chef at El Culler de Pau restaurant in the town of O’Grove (in the province of Pontevedra) in the Rías Baixas region.
The chef's influences are wide-ranging, including renowned restaurants such as Aduriz and Noma where he spent several years. However, he credits his father as his first significant influence, teaching him the importance of discipline and continuous improvement.
The chef's passion infuses all his dishes, and he seeks to convey that passion to diners. The philosophy of Culler is based on trade, commitment, and love in equal measure, creating a natural kitchen that draws on the environment, local products, and global influences while avoiding dogmatism.
